🧁 Vegan Banana Oatmeal Muffins

🛒 Ingredients:

2 large ripe bananas, mashed

1/2 cup unsweetened applesauce (or extra banana)

1/3 cup maple syrup or agave

1/4 cup plant-based milk (almond, oat, soy, etc.)

1 tsp vanilla extract

1 1/2 cups rolled oats

1/2 cup oat flour (blend oats if you don’t have)

1 tsp baking soda

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

Optional: 1/3 cup vegan chocolate chips, chopped nuts, or blueberries
👨🍳 Instructions:
🔹 Step 1: Preheat Oven
Preheat to 350°F (175°C) and line or grease a muffin tin.
🔹 Step 2: Mix Wet Ingredients
In a large bowl, mash bananas. Add applesauce, maple syrup, milk, and vanilla. Stir until well combined.
🔹 Step 3: Add Dry Ingredients
Add oats, oat flour, baking soda, baking powder, cinnamon, and salt. Mix just until combined. Fold in any optional add-ins.
🔹 Step 4: Fill Muffin Tins
Spoon batter into muffin cups, filling each about 3/4 full.
🔹 Step 5: Bake
Bake for 20–22 minutes, or until a toothpick comes out clean. Let cool in the tin for 5 minutes, then transfer to a wire rack.
