Soft, naturally sweetened muffins made with ripe bananas, oats, and no dairy or eggs. Perfect for meal prep, kids, or on-the-go energy!

🛒 Ingredients:

  • 2 large ripe bananas, mashed

  • 1/2 cup unsweetened applesauce (or extra banana)

  • 1/3 cup maple syrup or agave

  • 1/4 cup plant-based milk (almond, oat, soy, etc.)

  • 1 tsp vanilla extract

  • 1 1/2 cups rolled oats

  • 1/2 cup oat flour (blend oats if you don’t have)

  • 1 tsp baking soda

  • 1 tsp baking powder

  • 1/2 tsp cinnamon

  • 1/4 tsp salt

  • Optional: 1/3 cup vegan chocolate chips, chopped nuts, or blueberries


👨‍🍳 Instructions:

🔹 Step 1: Preheat Oven

Preheat to 350°F (175°C) and line or grease a muffin tin.

🔹 Step 2: Mix Wet Ingredients

In a large bowl, mash bananas. Add applesauce, maple syrup, milk, and vanilla. Stir until well combined.

🔹 Step 3: Add Dry Ingredients

Add oats, oat flour, baking soda, baking powder, cinnamon, and salt. Mix just until combined. Fold in any optional add-ins.

🔹 Step 4: Fill Muffin Tins

Spoon batter into muffin cups, filling each about 3/4 full.

🔹 Step 5: Bake

Bake for 20–22 minutes, or until a toothpick comes out clean. Let cool in the tin for 5 minutes, then transfer to a wire rack.


Storage Tips:

  • Store in an airtight container at room temp for 2 days or in fridge up to 5 days.

  • Freeze for up to 3 months — just thaw and reheat!
