1 lb (450g) ground chicken

1/3 cup sun-dried tomatoes in oil, finely chopped

1/4 cup feta cheese, crumbled

2 cloves garlic, minced

1/4 cup red onion, finely chopped

1 egg
-
1/3 cup breadcrumbs (or almond flour for low carb)

2 tbsp chopped fresh parsley or basil

1/2 tsp dried oregano

Salt & pepper to taste

Optional: zest of 1 lemon for brightness
👨🍳 Instructions:
🔹 Step 1: Preheat
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
🔹 Step 2: Mix the Meatball Mixture
In a large bowl, combine ground chicken, sun-dried tomatoes, feta, garlic, onion, egg, breadcrumbs, herbs, lemon zest, salt, and pepper. Mix gently — don’t overwork the meat.
🔹 Step 3: Form Meatballs
Scoop about 1 1/2 tablespoons of mixture and roll into balls. Place on the baking sheet spaced slightly apart.
🔹 Step 4: Bake
Bake for 18–20 minutes, or until meatballs are golden and cooked through (internal temp: 165°F/74°C).
