🥭 Mango Chia Fruit Salad

A juicy, vibrant fruit salad with sweet mangoes, fresh berries, citrus, and a refreshing chia-honey-lime dressing. Perfect for breakfast, snacks, or summer sides!

🛒 Ingredients:

🥭 Fruit:

  • 1 large ripe mango, peeled and diced

  • 1/2 cup strawberries, sliced

  • 1/2 cup blueberries or blackberries

  • 1 kiwi, peeled and chopped (optional)

  • 1/2 banana, sliced (optional – add just before serving)

  • 1–2 tbsp fresh mint, chopped (optional)

🍯 Chia-Lime Dressing:

  • 1 tbsp chia seeds

  • 1 tbsp honey or maple syrup

  • 1 tbsp fresh lime juice (or lemon juice)

  • 1/2 tsp lime zest (optional)

  • 1–2 tbsp water (to thin dressing as needed)


👨‍🍳 Instructions:

🔹 Step 1: Mix the Dressing

Mix chia seeds, honey/maple, lime juice, zest, and water in a small bowl or jar. Let it sit for 5–10 minutes until it slightly gels.

🔹 Step 2: Prep the Fruit

Wash, peel, and chop all fruit into bite-sized pieces. Combine in a large bowl.

🔹 Step 3: Toss It Together

Pour the chia-lime dressing over the fruit. Toss gently to coat evenly.

🔹 Step 4: Chill & Serve

Let it chill in the fridge for 10–15 minutes for the best flavor. Top with mint just before serving.


Tips:

  • Use fresh mango for maximum sweetness and texture.

  • Add coconut flakes or toasted almonds for crunch.

  • Store leftovers in the fridge up to 1 day (best eaten fresh).
