🛒 Ingredients:

For the braised butter beans:

2 cups cooked or canned butter beans (drained & rinsed)

2 tbsp olive oil

1 small onion, finely chopped

2 garlic cloves, minced

½ tsp smoked paprika (optional)

¾ cup vegetable stock

Salt & pepper to taste

For the wild garlic oil:

1 cup wild garlic leaves (or spinach + 1 garlic clove)

¼ cup olive oil

Pinch of salt


To serve:

3 tbsp goat’s curd or soft goat cheese

Crusty sourdough or multigrain bread

Microgreens or fresh herbs (optional)


👨‍🍳 Instructions:

🔹 Step 1: Make the wild garlic oil

Blanch the wild garlic in water for 20 seconds, then transfer to ice water.

Drain and squeeze out water.

Blend wild garlic with olive oil and a pinch of salt until smooth. Set aside.


🔹 Step 2: Braise the butter beans

Heat olive oil in a skillet over medium heat.

Add chopped onion and cook until translucent.

Add garlic and smoked paprika. Cook for 1 minute.

Stir in butter beans and vegetable stock.

Let simmer for 10–15 minutes until the beans absorb flavor and the sauce thickens. Season with salt & pepper.


🔹 Step 3: Assemble the dish

Spoon the warm braised butter beans onto a serving plate.

Dot with small spoonfuls of goat’s curd.

Drizzle wild garlic oil over the top.

Serve with crusty bread and garnish with herbs or microgreens.
